Sardin Perathal


this is yummy to eat with thosai...especially kalau thosai garing2.....
1 tin sardin
5 bawang kecil (shallot) *
1/2 in fresh turmeric *
2 onions
2 bawang putih (garlic) *
1 in halia (ginger) *
1 tsp halba campur
1 cili merah
2 tomato
1 tangkai daun kari
1 - 2 tbsp rempah ikan
1 lime juice
1. Blend bahan2 *. Tumis bawang besar, halba campur & daun kari.
2. Masukkan bahan2 yg diblend & rempah ikan, tumis hingga wangi & garing.
3. Masukkan sardin, tomato & cili merah.
4. Hancurkan ikan sardin, perisakan with garam.
5. Lastly before tutup squeeze lime juice.

Sotong Goreng Kunyit


Resepi nie something diffrent that i ussualy do. Its Kak Rinn recipe...thanks kak for sharing the recipe.
BAHAN-BAHAN:
500gm Sotong
1 biji bawang besar, dimayang
3 biji bawang putih, dimayang
2cm halia, dihiris nipis
1 btg serai, diketuk
1 camca teh serbuk lada putih
2 sudu besar sos tiram
1 sudu besar serbuk kunyit
Garam dan gula secukup rasa
Sekeping asam gelugur
Minyak utk menumis
Lada benggala hijau ( Capsicum)

CARA-CARA:
1. Tumiskan semua bawang, serai dan halia hingga agak layu.
2. Masukkan lada putih. Kacau seketika, masukkan sos tiram.
3. Masukkan sotong dan kacau hingga sotong agak kecut.
4. Masukkan serbuk kunyit dan asam gelugur. Kacau rata.
5. Perasakan dgn garam dan gula.
6. Padamkan api, masukkan hirisan lada benggala. Angkat dan hidangkan.

Tiger Prawn with Coconut


Each time when i cook this dish, it reminds me of my late grandma.

1 kg of tiger prawn (udang galah)
20 cili padi *
1/2 coconut *
1 in turmeric *
1 in ginger *
2 lemongrass *
1 tbsp jintan kasar *
1 tsp black pepper *
1 tsp pepper *
3 onion *
5 garlic *
sugar to taste
lime juice to taste
salt to taste
Ladys finger

Method:-
1. Blend all * till fine.
2. Heat up oil, add in blended ingredients.
3. Stir till you can smell the aroma or till "pecah minyak"
4. Add in prawns
5. Add in sugar, lime juice and salt.
6. Once the prawns are cooked, lastly add in the ladys finger.
7. Stir for few minutes and its ready to serve.

Chilli Prawn

Ingredients:-
500gm prawns (marinate with salt & turmeric powder)
1 onion
2 garlic
1cm garlic
handsful of dried chilli
2 tbsp dark soya sauce
2 strands of curry leaves
salt to taste

Method:-
1. Fry the marinated prawn. Keep aside.
2. Saute the onion. Keep stirring till soft, add dried chilli, curry leaves, garlic, ginger.
3. Add in 1/2 cup water and dark soya sauce.
4. Add in salt to taste.
5. Once gravy ticken, add in the fried prawn.
6. Served with hot rice.

Seafood Paprik

Ingredients:-
200gm chicken
200gm prawn
200gm squid
4 shallots - blend
2 garlic - blend
1 onion - sliced
2 lemongrass - bruised
2 tomato - cut into 6
5 chilli padi (bird eye chilli) - bruised
3tsp of lime juice
7 kaffir lime leave - sliced thinly
8tbsp chilli sauce
6tbsp tomato sauce
4tbsp oyster sauce
carrot
baby corn
cauliflower
long beans
salt to taste
water
oil

Method:-
1. Heat up oil in wok, stir fry half cooked the chicken followed by prawn and squid. Keep aside.
2. Heat up oil, add in the shallot, garlic & chilli padi. Stir for a while.
3. Add in chilli sauce, tomato sauce & oyster sauce. Let it boil and add water.
4. Add in lemongrass, kaffir lime leaves and all the vegetables.
5. Keep stiring, add in the chicken, prawn & squid and stir till vege is cooked.
6. Add in sliced salt, onion and tomatoes. Stir.
7. Add in lime juice and remove from heat.

Chilli Crab

Ingredients:-
4pcs Crab
5 red chilli (can add more) }
3 garlic }
10 shallots } blend
1in ginger }
1in fresh turmeric }
1 lemongrass - bruised
salt to taste
few dash of dark soya sauce for colouring (can omit this)

Methods:-
1. Clean the crab and keep a side.
2. Heat up oil in wok and fry the blended ingredients and lemongrass until fragrant.
3. Add in the crab and stir.
4. Add in salt and 2 - 3 dash of dark soya sauce for the coloring.
5. Add in water if you want more gravy and stir.
6. Add in egg and stir till egg & crab cooked. Not forgetting the salt.
7. Remove from heat. Best served with hot rice.

Sotong Berkunyit (Squid in Turmeric Sauce)

Ingredients:-
300 gm squid
1 onion (sliced)
2 garlic (sliced)
1 in ginger (sliced)
1/2 tsp tumeric powder
Salt to taste

Method:-
1. Heat up oil. Saute onion, garlic & ginger.
2. Add in squid and tumeric powder.
3. Add in water, let the squid well cooked.
4. Add salt and remove from heat.

Squid Curry

Ingredients:-
600gm squid
2 onions
2 curry leaves
3 garlic }
1 1/2 in ginger } blend together
3 potatoes cubed
4 tbsp fish curry powder
1 tsp halba campur
2 tomatoes
2 chillies slit
salt to taste
water
Method:-
1. Heat oil, saute onion, curry leaves and halba campur. Add in blended garlic & ginger.
2. Add in potatoes. Once potatoes half cooked, add in squid and little water.
3. Add in the fish curry powder. Add in enough water for the gravy. Add in salt to taste.
4. Before remove add in tomatoes and chillies.
5. Serve hot.

Fish Taucu


Ingredients:-
2 cencaru fish (medium size) - any fish
10 cili padi } (you can add more)
2 garlic}
3 onion } blend together
1 in ginger }
3 tbsp taucu }
4 tbsp tomato sauce (you can add more if u like)
1 tomato
1 tsp chilli powder
1 cup water
salt & sugar to taste

Method:-
1. Marinate fish with salt and tumeric powder. Fry and keep aside.
2. Heat up oil, add in blended ingredients. Stir.
3. Add in tomato sauce, taucu, tomato & chilli powder. Stir.
4. Add in water, salt & sugar.
5. Lastly add in the fish and remove from heat.

Prawn Fritters

(Source Blackmore)

Bahan2:-
1 kg udang (buang kulit & tinggalkan ekor)
2 biji telur
2 tbsp oyster sauce
Marinate the above for 20 minits

Bahan2 utk tepung:-
1 cup self raising flour
1 biji telur
1 tbsp oil
salt to taste
water
Cara2:-
1. Bahan tepung dicampurkan dan dikacau rata. Adunan not to be watery.
2. Dip in the prawn and deep fry.
3. Hidang dgn sos cili and mayonis.
