Chicken Rendang

Ingredients:-
1 chicken
20 shallots }
4 garlic }
10 chilli padi } to blend till fine
8 tbsp chilli paste }
3 lemongrass }
2 in fresh turmeric }
2 tbsp of kerisik
1 turmeric leaf
6 kaffir lime leaves
3 cups of thick coconut milk

Method:-
1. In a wok, put in the blended ingredients, chicken and coconut milk. You may add water if the coconut milk is not enough. It should cover the chicken.
2. Let it cook till thicken. Once the gravy start to thicken, add the kerisik.
3. Add in the turmeric leaf and kaffir lime leaves.
4. Remove from heat once the gravy start to dry off.
5. Best served with rice / ketupat / nasi impit.
