Inji Puli

Ingredients:
2 onions - diced
2 tomato - diced
400gm ginger - diced
4 garlic - diced
2 green chilies - diced
1tbsp turmeric powder
1tbsp chilli powder (add more if you like spicy)
1/2tsp fenugreek seed
1/2tsp mustard seed
1/2tsp coriander powder
1 cup of thick tamarind juice
Handsful of curry leaves
enough water
salt & sugar to taste

Method:-
1. Heat oil, add in fenugreek & mustard seed. Add in curry leaves.
2. Add in ginger, onion, tomato, garlic & green chillies. Add little water.
3. Once soft, add in coriander, turmeric & chilli powder.
4. Add in tamarind juice, salt & sugar.
5. Cook till the gravy is thicken.
6. Served with rice and as chutney.
